  • Olive oil– Use a high quality one.
  • salted butter– When combined with olive oil for sautéing, it increases the flavor and smoke point of the butter.

  • sal kosher– Add to taste.

The process of making homemade mozzarella sticks is very simple: dip each stick in flour, then in the eggs and then in the panko mixture. Repeat until all sticks are covered a second time. Then freeze them for at least two hours before frying. And while the mozzarella sticks are forming in the freezer, you can make a delicious tomato-based sauce to serve them.

Prepare

Prepare 3 separate bowls, one with the beaten eggs, one with the flour mixture and the last bowl with the flour mixture. Be sure to mix the panko and flour mixtures together so the seasonings are evenly distributed.

Use one hand specifically for dipping the cheese sticks in the dry mixes and the other hand for the (wet) egg sauce to avoid getting your hands too dirty. Take one mozzarella at a time and roll in flour mixture, shaking off excess. Dip in egg mixture, then panko mixture, and repeat a second time with each mixture. Transfer to a wire rack.

Once all pieces are covered, place the rack in the freezer for 2 hours. While the mozzarella sticks are freezing, start making the vodka sauce.

Pour enough oil into a 4-quart Dutch oven so it is 1 ½ inches deep. Heat the oil over medium-high heat until the thermometer registers 350°F. Carefully cook the mozzarella sticks in small batches, being careful not to overcrowd the pan. Fry for 1½-2 minutes until golden brown, turning occasionally.

Transfer to a wire rack and season with kosher salt. Repeat until finished. Serve with hot vodka sauce.
